Spicy Tortellini Soup

Looking for a delicious recipe to warm you up? Spicy Tortellini Soup is easy and full of flavor.

Am I the only one that kept getting served tortellini soup recipes over the holidays? It seemed like that’s all Pinterest, Instagram and TikTok wanted to give me. The problem was that every single recipe I found contained 1. Sausage or 2. Stewed tomatoes. There’s nothing wrong with either, they’re just not my favorite ingredients, so I set out to create my own. The end result is this Spicy Tortellini Soup that is not only full of flavor (with a kick), but super easy to pull together for a weeknight meal.

SPICY TORTELLINI SOUP

Spicy Tortellini Soup

Yesterday brought annoyingly cold weather to us in Washington, DC and truthfully the only thing I wanted to do was lay around and eat bread. I compromised with this soup and a big crusty piece of bread with lots of butter. Safe to say, my stomach was really happy and this whole dish comes together in less than 30 minutes.

To make Spicy Tortellini Soup at home, you will need:

1 pound ground beef (I used 93% lean)

1 tbsp. King Arthur Pizza Seasoning

1 tbsp. crushed red pepper

1 yellow onion, diced

4 garlic cloves, diced

2 tbsp. tomato paste

6 cups chicken stock

2 9 oz. packages of fresh (refrigerated) tortellini

1 cup heavy cream

handful of massaged kale (as little/much as you want)

sea salt garnish

SPICY TORTELLINI SOUP

1. In a large dutch oven, saute the ground beef with the pizza seasoning and crushed red pepper.

2. Remove the beef from the dutch oven, leaving about 1 tbsp of grease in the pan. Remove the rest and discard.

3. Add in the onions and cook over medium heat until fragrant.

4. Add in garlic and cook for about 5 minutes.

5. Add beef back to pan and combine with onions and garlic. 

6. Stir in tomato paste and cook until paste darkens slightly and covers mixture.

7. Stir in chicken stock 1 cup at a time and add tortellini.

8. Bring soup to a rolling boil.

9. Reduce heat to low and stir in heavy cream.

10. Add in kale and cook until wilted.

11. Garnish with flaky sea salt and enjoy!
